Apple Enchiladas

I know what you’re thinking: “Apple what?” Yes, apple enchiladas. I was going to make them for a breakfast meeting at work this week but didn’t have any flour tortillas. I did manage to have ingredients for apple crepes, though (kind of), so it all worked out. Anyway, after testing out my new Italian Pot Roast recipe on our friends last night I figured why not subject them to an apple enchilada experiment, too? Another recipe from Southern Living that was really delicious! What’s not to like, though? Homemade (of course) apple pie filling wrapped in a whole wheat flour tortilla drowning in caramel sauce and topped with ice cream (or whipped cream, no rules here).

Italian Pot Roast

I have managed to put down my Cooking Light magazine for a night and pick up Southern Living. That’s where this delicious recipe came from. I made for friends for dinner last night and they loved it…or at least they SAID they did! Stuck with the traditional mashed potatoes and carrots for the sides. I  forgot (really, I did) to add tomato paste to the cooking liquid. I’m glad I did, though, because I think it would’ve made it too tomato-y. But maybe that’s why it’s called “Italian” pot roast.
