p. 155: Mashed Potato Tacos

I’m sure when Sam came up with this recipe it was after midnight and there was probably alcoholic beverage involved. I’m giving the recipe to you because there’s no other way to describe these:

1 1/2 c. leftover mashed potatoes
4 corn tortillas
2 tablespoons sour cream
4 teaspoons hot sauce
1/2 c. finely chopped green onion
4 handfuls of potato chips – preferably the extra-crispy kind
**NOT IN ORIGINAL RECIPE BUT I THINK IT SHOULD BE: 4 slices bacon, cooked and crumbled

Warm the potatoes until heated through. Heat the tortillas in a nonstick skillet until they begin to get a little color in spots and a little crispy.

Spread some sour cream onto each tortilla. Add about 1/4 of the mashed potatoes. Drizzle with the hot sauce and then sprinkle with the green onions (and bacon, if using). Take a handful of potato chips and crush them on top of each taco.

Fold in half and serve.
