1 1/2 c. leftover mashed potatoes
4 corn tortillas
2 tablespoons sour cream
4 teaspoons hot sauce
1/2 c. finely chopped green onion
4 handfuls of potato chips – preferably the extra-crispy kind
**NOT IN ORIGINAL RECIPE BUT I THINK IT SHOULD BE: 4 slices bacon, cooked and crumbled
Warm the potatoes until heated through. Heat the tortillas in a nonstick skillet until they begin to get a little color in spots and a little crispy.
Spread some sour cream onto each tortilla. Add about 1/4 of the mashed potatoes. Drizzle with the hot sauce and then sprinkle with the green onions (and bacon, if using). Take a handful of potato chips and crush them on top of each taco.
Fold in half and serve.
