We LOVE meatloaf at our house. I’ve always cooked the same ol’ recipe, though, so I was traveling into unchartered territory by cooking Sam’s recipe. What made it “Mexican?” The meat mixture had diced green chiles and fajita seasoning and the glaze had 2 teaspoons of canned chipotle peppers. It SO good Audrey had 2 helpings of it! Can’t wait to make Meatloaf Sloppy Joes with the leftovers (p. 149).
